Mediterranean Baked Cod

Ingredients

  • 1.5 lb cod fillet
  • 1 sm red onion, sliced or large shallot
  • 3 cloves garlic crushed
  • 8 oz cherry tomatoes halved
  • 1/4 cup sliced black olives
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • salt & pepper to taste
  • 1/2 tsp lemon pepper
  • 1/4 cup white wine or water
  • 4 tbsp chilled butter chopped
  • 1/2 red or yellow bell pepper sliced and halved

Instructions

  • Prep: Preheat the oven to 400°F. Drizzle 1/2 of olive oil an oven-safe everyday pan that will comfortably hold all your ingredients.
  • Add the onion, bell peppers and olives. Sauté until onions soften. Add garlic and sauté about 90 seconds.
  • Deglaze with wine, add tomatoes and cod.
  • Season: Drizzle remaining olive oil all over the ingredients in the pan. Sprinkle with Italian seasoning and season with salt and pepper.
  • Finish and bake: Pour the water into the dish. Scatter the butter evenly over the dish. Cover and bake for 15-20 minutes, or until the tomatoes and fish are cooked.
  • Remove cover and place pan under broiler 5-7 minutes to brown top of fish.

Notes

Sweety Drop peppers can be scattered across ingredients before broiling.
Excellent with brown rice cooked in chicken broth and buttered during resting period.
